Baked Ziti Florentine

If this sauce is too thick for you, just add water.

Try topping this with a couple of cups of shredded mozzarella!

Ingredients

1 pound ziti pasta
1 tablespoon vegetable oil
1 pound ground beef, browned
1 small can tomato paste
1 small can tomato sauce
1 cup chopped onion
1 can (28 oz.) crushed tomatoes
1 1/2 tablespoons minced garlic (or more)
1 1/4 teaspoons dried oregano
1 teaspoon dried thyme
1 cube chicken bouillon
Ground black pepper
1 10oz box frozen chopped spinach, thawed and squeezed dry
1 15oz carton ricotta cheese
1/2 cup (or more) grated Parmesan cheese

Cook ziti in large pot of boiling SALTED water according to package directions. Drain and leave in the colander.

Heat oil in same pot. Add onions and cook over medium-high heat until caramelized and translucent.

Stir in beef, tomatoes, tomato paste, tomato sauce, garlic, oregano, thyme, bouillon, and pepper. Bring to a simmer, cover and cook 15 minutes for flavor to develop. Taste and re-season, if needed. Stir in spinach and cook 5 minutes longer. Remove from heat.

Preheat oven to 375º

Grease a 13×9-inch baking dish. Stir cooked ziti and ricotta cheese into spinach sauce until blended. Spoon into baking dish. Sprinkle with Parmesan cheese, and bake 30 minutes, or until top is golden.
