Zucchini Soup

Mommaw used to make this about once a week in the summer when we had fresh zucchini from the garden. I was such a turd when I was little, and the more they told me I’d love something, the more set I was to dramatically curl my lip and make gagging noises. So unsurprisingly, I never tried this. I will try to be mature and try it soon. Maybe.

Ingredients

4 or 5 zucchini, peeled and diced
1 can whole tomatoes
1 tablespoon butter
1 clove garlic
5 cups beef stock
1/2 cup rice
Parmesan cheese

Melt butter and add garlic. Add zucchini and sauté until golden brown. Add tomatoes, beef stock, and rice. Simmer until rice is tender. Serve with grated Parmesan cheese.
