Paul’s Meatloaf
All my kids are insane for this recipe! I can always tell when Paul is making this, I can hear him slapping the meatloaf into submission from the other end of the house!
Ingredients
1 packet McCormick meatloaf seasoning
2 pounds lean ground chuck
1/2 cup ketchup plus a few squirts, divided
1 (6-oz.) package Chicken flavored Stove Top Stuffing™ mix
1 tablespoon dry mustard
1 cup milk
2 eggs
Salt and pepper (1/4 tsp each)
1/2 teaspoon garlic powder
1 tablespoon Worchestershire
2 pounds lean ground chuck

1 (6-oz.) package Chicken flavored Stove Top Stuffing™ mix
1 tablespoon dry mustard
1 cup milk
2 eggs
Salt and pepper (1/4 tsp each)
1/2 teaspoon garlic powder
1 tablespoon Worchestershire
Preheat oven to 375ºF and grease a 9×13″ pan.
In a large bowl, beat eggs. Whisk in 1/2 cup ketchup, milk, seasoning packet, dry mustard, salt, pepper, garlic powder, and Worchestershire. Stir in stuffing mix and coat well.
Let mixture sit for 5 minutes.
Crumble meat into mixture, then combine for a couple of minutes, then shape into loaf.
Place loaf into prepared pan, and top with the remaining few squirts of ketchup. Cover tightly with tinfoil.
Bake 55 minutes to an hour until cooked through (160ºF in center). Remove from oven and eat!
