This is from my sister, Sherri’s (Queen) files. Serve this over pasta, rice, or taters.
Ingredients
4 Large chicken breasts
1/2 cup vinegar
1/2 cup soy sauce
2 garlic cloves, minced
1 small piece of ginger, cut in strips
1/4 teaspoon pepper
1 small bay leaf
1 tablespoon salt
3 tablespoons vegetable oil
Combine all ingredients except oil and let it marinate for 30 minutes. Remove chicken and reserve liquid.
Over medium heat, place oil in a skillet and fry chicken pieces until browned. Pour off fat and add reserved sauce to skillet.
Simmer uncovered over medium heat until chicken is tender and liquid is reduced to about 1/4 cup. Remove bay leaf and serve.
