Chicken Quesadillas
You can have this made for your family in under 30 minutes! If you want to add a kick to your sour cream, stir in some lime juice and lime zest. So good!
This makes 4 quesadillas.
Ingredients
1 cup shredded cheddar cheese, or whatever you have (pepper jack is amazing!)
1 onion, chopped
2 tablespoons of bacon grease or oil
Taco sized flour tortillas
1 cup shredded cooked chicken
Sour cream
Salsa
1/4 cup sliced green onion, optional
Taco sauce, optional
Chopped black olives, optional
Chopped tomatoes, optional
Salt and pepper
3/4 teaspoon garlic powder
Over medium heat, sauté half of the chopped onion in bacon grease until tender and lightly brown, remove from skillet and place into a bowl.
In a medium sized bowl, season your chicken with garlic powder, salt and pepper and anything else you want.
Wipe out skillet and place in a flour tortilla. On half, put ¼ cup chicken, ¼ cup shredded cheese, and whatever else you want: cooked onions, raw onions, green onions, salsa, taco sauce, tomatoes, or olives. Fold tortilla in half.
Fry for five minutes, carefully flip it over and fry for five more minutes heating through. When the cheese is melted, remove from heat. Do this with all the tortillas. Serve with sour cream and whatever else flips yer trigger.
