Genevieve's Lemon Cake

This is my mom-in-law, Genevieve’s recipe.

Ingredients

Cake:
1 box lemon cake mix
1/2 cup oil
1 cup water
3 teaspoons lemon flavoring
4 eggs
1 tablespoon lemon zest
1 (3-oz.) package Lemon Gelatin

Glaze:
1/2 box powdered sugar
1/3 cup lemon juice

Cake: Preheat oven to 350°.  Grease and flour (or spray with non-stick cooking spray) tube pan.  Mix together all ingredients and pour into greased and floured pan (I usually use a Bundt tube pan) and bake according to the package’s instructions. 

Glaze: Add lemon juice, 2 tablespoons at a time to the sugar until you get a *thick glaze. Pour this over your cooled cake. (*Try to get this mixture as stiff as possible because if it’s too thin, you’ll have glaze running everywhere.)
