Ham and Pickle Roll ups

For the love of God and all things holy: do NOT use sweet pickles. Nasty.

This makes about 25-30 roll ups – I usually double this recipe to have enough for my family of pickle freaks.

Ingredients

16 ounce jar of dill gherkins or pickle spears
1/2 pound thinly sliced honey baked ham
8 oz. cream cheese, softened
1/2 package Hidden Valley Ranch (HVR) dressing mix

In a small mixing bowl, combine cream cheese and ranch dressing mix.

Spread the cream cheese mixture evenly over a slice of ham, making sure to cover the entire slice.

If using whole pickles/gherkins, trim off the ends. Pat the pickle dry with a paper towel then set on top of the cream cheese mixture. Tightly roll each pickle up in the ham, and use toothpicks to hold them closed. Cut into 1-inch pieces and arrange on a large plate or serving platter.

Cover with plastic wrap and refrigerate until ready to serve.
