Smashed Garlic Potatoes
You can use either red potatoes or small gold potatoes. The gold ones are a little sweeter than the others.
Ingredients
1 teaspoon olive oil
3 tablespoons olive oil
2 tablespoons softened butter
1 teaspoon paprika
1 tablespoon onion powder
1/2 teaspoon ground pepper
1 1/4 teaspoons salt
1 pound new potatoes
Preheat oven to 375F.
Cut 1/4″ of top off of garlic head, place in tinfoil, drizzle with 1 teaspoon olive oil and sprinkle with salt. Close up tinfoil and bake garlic for 30 minutes. Remove from oven.
Cut off any bad spots on the potatoes and boil in salted water until fork tender. Remove from heat.
Squeeze roasted garlic out of head and put into small mixing bowl. Add everything except potatoes. Mash with fork and mix until well blended.
Line cookie sheet with parchment paper. Place each potato on cookie sheet and smash with spatula until about 1/2″ thick. Make sure these are evenly spaced.
Brush each potato with roasted garlic mixture.
Bake for 15-20 minutes until crispy.
