2 cups Bisquick Baking mix 2/3 cup milk 1/4 cup vegetable oil 1 egg, lightly beaten 1 cup shredded cheddar cheese
Preheat oven to 400°.
Grease muffin pan and set aside. In a large mixing bowl, stir together wet ingredients (milk, oil, and egg). Add Bisquick and stir until just moistened (batter will be lumpy). Fold in cheese and bacon. Divide batter among muffin cups, filling each 2/3 full.
Bake until golden brown, about 20 minutes. Cool 15 minutes before devouring.
