Gen's Seafoam Salad​

This is my mother-in-law Genevieve’s recipe. This is a good way for the kids to get calcium and fruit.  Don’t ask Paul what color this is, he will say, “Beige.” If the can of pears yields less than one cup of juice, just mix in water to make one cup.

Ingredients

1 cup pear juice (from the can of pears)
3-oz. (4-serving size) lime Jell-O
1 large can pears, reserve liquid
1 (8-oz.) carton Cool Whip, thawed
1 (8-oz.) package cream cheese, softened

Mix pear juice and Jell-O in a small saucepan. On low heat, stir constantly until Jell-O is dissolved, then remove from heat. In your sink, fill a third of the way with cold water and add ice. Set the Jell-O mixture in the sink (please leave this mixture in the pot…duh).

In a blender, puree pears, then add in cream cheese and mix until fine and well blended. Add pear mixture to Jell-O mixture and stir.  Fold in Cool Whip; chill.
