This chapter is devoted to breads, muffins, rolls, and biscuits, plus the goopy stuff like gravies, sauces, marinades, and oatmeal. I know they don’t really go together but it’s my cookbook and I can do whatever I want. So there.
Breads
The following are breads that can be served with a meal or alone as a snack.
Do. Not. Over-mix. Your. Muffin. Batter. You want to stir the batter until it is barely moistened. Yes, it’ll be lumpy, but that’s what it’s supposed to be!
Only fill the holes in your muffin pan 2/3 full with batter. Don’t forget that you can use paper liners instead of greasing your muffin pan.
